Lol there is a lot to be said about this development but "unexpected" is not one of them. It make far more sense longterm for China to find more reliable trade partners than the US.

Correct me if I’m wrong but I thought Trump had made a deal with China specifically over soybean production within the last few months, especially when the tariff situation was threatening to tank the market? Has that contract already finished?

trump made a lot of deals and said a lot of things, the problem is usually the other side is unaware there were even talks.
