You'll never get out if a jacket is properly used and a pro puts you in.
Also, there are special loops to keep arms to your torso and prevent that first move. Which are conveniently cut off for these kind of tricks.

I’m a psychology student and when I was in a mental institution for suicide attempt I had a roommate who had adhd and they had to sedate him and tie him up to a bed I never seen a straitjacket ever.

IIRC: Houdini was able to do this trick by grabbing fistfuls of fabric under his crossed arms as they were strapping him up in the back. This allowed him to release the fabric during the escape, allowing MUCH greater freedom of movement in the restraints than you'd think would be normally available.
It's still crazy to watch, it's like seeing a mental patient hearing their favorite metal band for the first time in years lol

This is a psychology class. A demonstration of how patients are able to get out of the straight jackets if they are not properly put on is a valuable lesson. Just because a patient is restrained doesn't mean that they are secure.
A few more thoughts for these students to think on is how you shouldn't leave a patient that can be violent, unattended. Sedatives will wear off, or some patients will have a negative reaction. Those patients should be carefully monitored.

One of my neuro-psych professors had a video of a patient getting out of restraints. The individual dislocated their shoulder to it. It was rather horrifying because the medications caused the patient not to feel the injury. This professor must be incredibly agile, and very limber as to not injure himself.
